Mia and I saw a TikTok video of someone making Christmas tree cakes herself instead of buying the store bought ones and we wanted to try! But I put an extra spin on mine! We also made Christmas tree cake pops with the leftover cake and they were delicious!!! Recipe Below:
Homemade Christmas Tree Cakes + Christmas Tree Cake Pops Recipe
Ingredients:
Cake-
• 1 1/4 cups all-purpose flour
• 1/2 tsp baking soda
• 3/4 tsp baking powder
• 3/4 cup sugar
• 1/4 tsp salt
• 1/2 cup Greek yogurt
• 1/3 cup + 1 tbsp milk
• 1 cup melted butter
• 2 eggs
Filling-
• 1 cup marshmallow fluff
• 4 tbsp unsalted melted butter
• 1-2 tbsp milk
• 1/2 tsp vanilla extract
• 1/4 cup powdered sugar
White Chocolate Coating-
• 1 bag white chocolate chips (12oz)
• 2-3 tbsp coconut oil
• Green sprinkles and red food coloring for decorating
Instructions-
• Preheat oven to 350°F. Line a 12x16inch sheet pan with parchment paper. It helps to grease the pan so the paper sticks and doesn’t roll up.
Make the cake-
• In a large mixing bowl, combine flour, baking soda, baking powder, sugar and salt.
• Add melted butter, Greek yogurt, milk,
and eggs, mix until smooth.
• Spread the batter into the
prepared pan evenly to the edges.
• Bake for 13-15 minutes, or until the cake springs back when touched.
• You should let it cool completely before cutting, but we only let it cool for about 10 minutes.
• Cut christmas trees out of the cake with the christmas tree cookie cutters.
Make the filling-
• In a new bowl, mix together marshmallow fluff, melted butter, milk, vanilla extract and powdered sugar until smooth and fluffy.
Put them together-
• Spread the filling on a cake and add another cake on top to make a sandwich.
• Then put them in the freezer for 30 minutes to make them firm and easier to work with.
Don’t waste that cake! Make cake pops!
• While the cakes are in the freezer, mix together the left over cake into a bowl with 2-3 tbsp of the marshmallow fluff mixture until it sticks together to form balls.
• Make 1inch balls and add to the freezer for the remaining 30 minutes the Christmas cakes have left.
Coat with the white chocolate-
• Melt the white chocolate chips and coconut oil in the microwave in a microwave-safe bowl for 30 seconds at a time, stirring each time until fully melted, or use the double boiler method.
• Cover each christmas tree cake and cake ball with the icing. I held it up and let it drip a bit before putting them on wax or parchment paper.
• Add sprinkles quickly before the chocolate hardens.
• With the leftover white chocolate, add a little bit of red food coloring and mix. • • Add to a ziplock and cut a tiny hole in the corner, like a piping bag, and then drizzle on to the christmas tree cakes.
Let sit and enjoy!
